These brownies require so few ingredients, are absolutely delicious, and entirely vegan.
Start by preheating your oven to 350 F.
Then cut your peeled sweet potatoes into chunk and place them into a steamer for about twenty minutes to make sure they get soft. Once they’re soft enough, remove them and add them to a food processor (or get a good workout and mash them yourself) along with your dates — make sure to take the seeds out of the dates!
Blend everything until it’s all one beautiful, uniform mixture.
Add the remaining ingredients into a bowl and stir them well, before mixing them in with the sweet potato and date combo.
Once all your mixtures have been made into one, place the combined mix into a lined baking pan and let bake for about 20-30 minutes; essentially until you can pierce the brownie with a fork and make sure it’s dry.
Let the brownies SIT for a minimum of 10 minutes. They need this time to stick together since our ingredients are temperamental.
Once everything has cooled and looks too good to wait… it’s all ready to devour!
